As a master cheesemaker, Marc is passionate about his profession, and it is essential for him to run a training-oriented business, as young people are the future of the trade.
Marc also has a deep love for dairy cows. In his free time, he works on his uncle’s farm alongside his brother, as he has done since childhood. This activity gives him a different perspective on the work of milk producers and is a valuable asset in their collaboration.
Marc receives strong support from his family. His wife, Floriane, manages the administration and operations of the business. His brother Luc, also a cheesemaker, assists with production, and his mother helps with sales.
Marc is proud to have taken over the Châtonnaye cheese dairy as of January 1st, 2023. This dairy mainly produces Gruyère AOP and organic Vacherin Fribourgeois AOP.
It also produces fresh tommes and specialty cheeses that are sold at the shop in Bulle. The dairy cooperative is made up of fourteen producers who supply milk of exceptional quality.
It is a dynamic organization that actively contributes to the dairy’s development. Notably, it supported the construction of a new cellar in 2009, which allows for the aging of 3,300 wheels of Gruyère AOP.
The cooperative has also continuously supported the cheese shop project in Bulle, including the production of a presentation film about cheese making and milk production.
