Presentation
A small cheese dairy in terms of milk volume, but large in the diversity and quality of the products it offers. The Montbovon cheese dairy and its shop are operated by Marc Delacombaz, who succeeded his father André. The shop is located in the center of the village along the main road, while the dairy itself is situated 50 meters behind. The family has been running the dairy since 1983.
One million kilos of milk are delivered annually by nine producers who farm the mountain pastures of the village. Ninety percent is used for the production of Gruyère AOP, which takes place 365 days a year. The remaining ten percent is used for making Vacherin Fribourgeois AOP and various other specialties.
At the end of 2020, Marc Delacombaz’s Vacherin Fribourgeois AOP was selected as the official “Réserve du Conseil d'État” for 2021. See the article.
