François Nicolet, a certified cheesemaker, took over the Posat dairy in 2011, succeeding his father who had run it since 1977. Today, he manages the dairy with the entire family and also oversees the small shop, which is open every day except Thursday. The dairy processes around 600,000 liters of milk per year, sourced from two milk producers in Posat, a small village near Farvagny in the larger merged municipality of Gibloux. Gruyère AOP is the dairy’s main product, followed by Vacherin Fribourgeois AOP. Posat fondue is, in fact, renowned far and wide! Sérac rounds out the selection of this friendly, family-run dairy.
