Presentation

Founded on October 31, 2016, the Interprofession de la Cuchaule is committed to the authenticity and quality of the Cuchaule, a flagship product of Fribourg's bakery tradition, and to promoting appreciation of this specialty among an ever-growing circle of taste enthusiasts. It is responsible for the application for recognition of Cuchaule as a Protected Designation of Origin (PDO) by the federal authorities. By enforcing compliance with the specifications and certifying all actors in the production chain, the Interprofession ensures that Cuchaule AOP fully respects tradition and meets the highest quality standards.

Ingredients from the canton of Fribourg (with the exception of saffron, a traditionally exotic spice) form the basis of authentic Cuchaule. Additives or any other ingredients besides wheat flour, whole milk, butter, eggs, sugar, salt, and fresh yeast are not permitted. The craftsmanship of the artisan baker is also essential, as they uphold traditional techniques to ensure optimal preparation and baking. A short shelf life and the prohibition of freezing guarantee the freshness of the product, whose quality is regularly monitored by independent inspections.

The Interprofession de la Cuchaule represents all parties and sectors involved in the production of Cuchaule. It defends the product’s values and promotes it through a strong, unifying brand identity.

Members of the Interprofession include:

  • Cereal producers for Cuchaule flour, represented by the Fribourg Farmers' Union
  • Millers who produce flour for Cuchaule
  • Bakers and pastry chefs who make Cuchaule, represented by the Association of Artisan Bakers-Pastry Chefs-Confectioners of the Canton of Fribourg

The Interprofession is open to any individual or organization that produces Cuchaule AOP in accordance with the official specifications, as well as to supporting members who are committed to preserving the authenticity of Cuchaule and respecting the traditions of the Bénichon festival.

Cuchaule received its PDO (AOP) designation on May 3, 2018.
