Quality is one of the main leitmotifs of Gruyère PDO, a raw-milk cheese that has been delighting palates for centuries. The 2,200 milk producers, 167 cheese dairies and 52 mountain pastures are committed to complying with strict, precise specifications. These artisans, all based in the Gruyère PDO production zone, are the guardians of an age-old tradition, and this guarantee of quality is sealed by its Protected Designation of Origin (PDO). Since 1 December 2011, this designation has been protected at European level thanks to the ratification of the mutual recognition agreement between Switzerland and Europe. Le Gruyère PDO is a true classic among Swiss hard cheeses. The subtle, distinctive taste of Gruyère PDO is attributed to the high-quality raw milk, which comes from cows fed mainly on grass in summer and hay in winter.
