NOULA, the new dairy: producing mozzarella and burrata with milk from Fribourg.
Noula is the maker of the first 100% Fribourg-sourced burrata and mozzarella, thanks to an innovative recipe. The milk and cream come from the region, and the production is done in the traditional way—in small batches. The guiding principle is transparency at every stage of the production chain, from the milk producers all the way to the plate.
The products are developed and produced in collaboration with the Grangeneuve Agricultural Institute.
