Each year, the Pisciculture de la Gruyère in Neirivue raises over 100 tonnes of rainbow trout—representing 10% of the national production—in basins fed by the Neirivue spring. Due to the cool water temperature (between 6°C and 9°C), the rearing period ranges from 17 to 20 months for most of the fish sold. This freshness and water quality ensure that La Truite de la Gruyère has impeccable texture and an incomparable taste. Rich in vitamin D, the trout also benefits from certification by the Swiss Foundation for Nutrition and Health.
