Presentation
In Gurmels (Cormondes), Stefan Etienne embarked by chance on an unusual farming venture: since 2015, he has been offering Fribourg snails to enthusiasts. It was during a walk in the forest with his daughter Céline that this stay-at-home father—a trained baker-pastry chef, cook, and commercial employee—had the idea to launch this unconventional business. Since picking up snails along the path was out of the question due to a cantonal ban dating back to 1968, Stefan Etienne decided to start a professional farm just a stone's throw from his home.
