Asparagus is a perennial plant from the lily family. Contrary to popular belief, the different colors of asparagus do not come from different varieties but from their exposure to light. White asparagus grows entirely underground, while green asparagus develops its color from chlorophyll under sunlight. The asparagus season is short, lasting about six weeks between May and June. Asparagus can be enjoyed in many forms, though one of the most beloved dishes remains asparagus served with ham and a rich hollandaise sauce.
