The Boutefas AOP belongs to the renowned family of raw sausages with interrupted maturation. It is made exclusively from pork meat and stuffed only into natural pork casing. Its ends are sealed with string or clips. The Boutefas AOP has a distinctive shape: the bulges of the pork cecum give it its unique appearance, and it is traditionally closed with a single string at one end.
Cooked whole, it is enjoyed hot, but it can also be cooled down and served in moderately thick slices.
Just like its cousin, the Jambon de la Borne AOP, the Boutefas earned its AOP certification in 2021.
