This round-shaped brioche owes its characteristic yellow crumb to saffron. While cuchaule was traditionally baked only during the Bénichon, it is now available all year round. Due to its great popularity, everyone has started making it – including major supermarket chains. Over 915,000 cuchaules are produced annually by artisan bakers in the canton of Fribourg. Cuchaule AOP is a typically Fribourg specialty that forms the first “layer” of the Bénichon gourmet menu. It is traditionally enjoyed with butter and Bénichon mustard, but can also be savored at breakfast.
