When whole milk is left to rest after milking, cream naturally rises to the surface because it is the least dense component. Double cream from La Gruyère contains at least 45% fat. Thick and velvety, it is produced from milk sourced in the Gruyère region. But it is in its pairing with meringue that double cream reaches perfection. The crunch of the meringue combined with the smoothness of the cream creates a truly blissful experience. This combination is a true specialty of the Canton of Fribourg.
