Each year, 420,000 wheels of Gruyère AOP are produced in Fribourg’s cheese dairies. This cheese, known for its delicate and mild flavor, delights those who seek smooth and refined tastes. Its flavor may vary depending on its maturity, which can range from 5 to 11 months. It is thanks to the expertise of milk producers, cheesemakers, and affineurs that Gruyère AOP holds its unmistakable character. Highly appreciated in the Moitié-Moitié fondue, Gruyère AOP also pairs wonderfully with a variety of hot or cold dishes, as well as in appetizers.
