During the months of March and April, truffles are fertilized underground. Depending on weather conditions, the maturation process can take up to nine months. Truffles are found throughout Switzerland, though more abundantly in certain regions. They thrive in moist environments and require tree roots and fallen leaves to absorb moisture. The canton of Fribourg is home to many forests where these fungi can be found. The most effective way to search for them is with a trained dog, as the task is otherwise extremely difficult. One way or another, truffle hunting generally demands a great deal of patience.
There are two main types of truffles: the white truffle, which has a strong aroma and a more subtle taste, and the black truffle, which has a milder scent but a more intense flavor. Considered a noble fungus, this natural product is sold at relatively high prices, especially since it must be harvested entirely by hand.
