Trout is a familiar fish to many, but it’s important to distinguish between lake trout—which can weigh up to 15 kilos—and river trout. The latter varies depending on its habitat and typically weighs between 300 and 500 grams. For a long time, river trout was a major attraction for restaurants, many of which maintained their own live tanks. Today, such tanks have become rare and are largely replaced by fish farms. In this regard, the canton of Fribourg is particularly well equipped, with several aquaculture specialists, including three key fish farms located in Fribourg, Belfaux, and Neirivue, focusing on trout farming.
