368,000 wheels of Vacherin Fribourgeois AOP are produced each year in the cheese dairies of the canton of Fribourg. The origins of Vacherin Fribourgeois AOP date back to around the year 1400. Made from cow’s milk and classified as a semi-hard cheese, Vacherin Fribourgeois AOP is produced exclusively in the alpine pastures and villages of Fribourg. The master cheesemakers of the region craft this cheese using ancestral know-how. Unique and always slightly different, Vacherin Fribourgeois AOP comes in six varieties and can be enjoyed in fondue, in various hot dishes, sliced, on a cheese platter, as a starter, or even as a dessert. In 2014, 26 alpine dairies and 69 village dairies produced nearly 3,000 tonnes of Vacherin Fribourgeois AOP.
