Preparation
Choose potatoes that break down easily when cooked.
Cut them into chunks and cook in cold salted water.
Cook for about 30 min.
Mash using a potato masher or ricer.
Add the butter and hot milk, and whisk well until smooth.
Season with salt and nutmeg to taste.
Serve on a warm dish.
