Preparation
Boil the potatoes in the morning and let them cool.
Peel the potatoes and grate them using a rösti grater.
Place the lard (or a bit of oil) in a frying pan. Add the onion and sauté gently.
Add the bacon and the grated potatoes, then season with salt.
Stir several times at the beginning, then let it brown on each side.
