Preparation
Purée the strawberries, sugar, vanilla sugar, and quark until smooth.
Dissolve the well-squeezed gelatin in a warm water bath.
Mix 2 tablespoons of the strawberry mixture with the dissolved gelatin, then stir it back into the remaining strawberry mixture, stirring constantly. Cover and refrigerate until the edges of the mixture begin to set.
Stir until smooth again, then gently fold in the whipped cream. Transfer to a piping bag and fill serving bowls.
Chill for 30 to 60 min until set.
Decorate just before serving.
Tips !
- You can also fill waffle cones with the mousse and chill them in a bundt pan or measuring cup before serving.

- 200 g Fribourg strawberries, hulled and chopped
- 4 tbsp sugar
- 1 tsp vanilla sugar
- 200 g quark
- 3 sheets gelatin, softened in cold water
- 1.5 dl cream, whipped firm
- a few strawberries, quartered, and red sugar for garnish
