Preparation
Cook the sweet potatoes in boiling salted water.
Meanwhile, peel and slice the carrots into thin rounds and finely slice the onions.
Sauté the carrots and onions in a bit of olive oil. When the onions turn translucent, add a little honey to the pan and stir (the carrots should be tender).
Once the sweet potatoes are cooked, mash them with a fork and add the egg yolks and crème fraîche. Taste and adjust seasoning if needed.
In a buttered gratin dish, place the carrot and onion mixture, then spread the mashed sweet potatoes on top. Finally, sprinkle with grated Gruyère AOP.
Bake for about 15 min at 200°C.
Tips !
- Serve with chicken strips or roast chicken.
