When Nathalie and Thierry Beaud decided to place two goats in a pasture next to their home, they had no idea that just a few years later, their herd would grow to 130! After completing a cheesemaking apprenticeship at the Montbovon dairy, Thierry Beaud earned his federal master’s diploma. In 1999, Thierry had the opportunity to take over the Hauteville dairy with his wife Nathalie. At the same time, they began raising goats.
What started modestly with two goats quickly expanded, and within two years the herd had grown to about fifty, allowing them to start producing goat cheese. In 2007, everything changed. The couple had already been thinking about focusing their work on goat farming when Nathalie’s father, a farmer, decided to retire. He handed over the alpine pasture he had worked for many years above the village of Lessoc to Nathalie and Thierry. They saw this as the perfect opportunity to devote themselves fully to raising goats and producing goat cheese, for which demand continued to rise.
“La Fromachèvre” was born!
