Presentation
Throughout the year, it’s possible to harvest honey two to three times—if nature allows. The first harvest consists of flower honey, collected primarily from cherry trees, apple trees, rapeseed, and dandelions near the apiary, not to mention the many small wildflowers in the fields. This honey, light yellow to white in color, is creamy and crystallizes quickly while remaining easy to spread. It is extracted at the end of May.
At the end of July comes the forest honey, a dark brown variety gathered from raspberry bushes, blackberry plants, linden trees, acacias, and fir trees (honeydew). Alexandre Gumy also manages the mating station at Petit-Mont (1,400 m), where he oversees several drone hives. The honey harvested in early August is considered a true delight.
