As every year, a highlight of this event is the Bénichon mustard competition. Candidates will compete in two categories: amateurs and professionals., the candidates compete in two categories: amateur and professional.
The jury, composed of Moustardiers, tastes and nominates the winners. Sweet and sour jams, which are inseparable from the Bénichon meal, are all part of the trade secret. Everyone has their own recipe, passed on under the seal of family secrecy and skilfully refined and improved over the generations. Taste, texture and consistency are three aspects judged by the Master Moustardiers. At the end of the tastings, the most subtle preparation is named the best Bénichon mustard in the canton of Fribourg. Prizes will be awarded to the top three in the amateur category, the top prizewinner in the professional category and the People's Choice Award.
A public contest is also set up.
Note that only the top 3 results in the professional category and top 20 results in the amateur category are published.

- Half-filled jar to be returned to the Estavayer-le-Lac tourist office no later than 4pm the day before the event
- Pot provided by the tourist office or possibility of obtaining a pot identical to that of the organisers: in glass with mechanical closure and rubber seal (white colour), with a capacity of 500 ml.
