Macaroni cooked in a cauldron over a wood fire with onions.

Ingredients :
- 350 to 400 g of elbow macaroni (without eggs)
- 250 g of Gruyère AOP (grated)
- 250 g of onion
- 2 to 3 dl of double cream or rich cream
- salt and pepper
- some butter
- some withe wine or vinegar
Cooking :
Cook macaroni in salted water at the last minute. It is important not to overcook them.
In a cast iron, melt the butter, put the onions without rosting them, add some of the cream, the drained hot pasta and grated cheese.
Mix while warming, season with salt and pepper and add the remaining cream and a dizzle of vinegar or white wine.
It is important that the macaroni is very hot, smooth and mellow.
Just before serving, cream and roughly grated Gruyère cheese are added.
