Gruyère AOP cheese is made over a wood fire in the Gruyère Brotherhood's chalet every Sunday, from December 28th to March 29th, 2026.

From the initial pouring of milk from local producers into the vat to the final cheese-making process after more than two hours, every stage of production is explained with passion and a desire to share the fascination of transforming milk into cheese.
It's also an opportunity to taste the whey, curd, and the delicious Gruyère cheeses: mild, medium, and strong.
The wood-fired cheesemaking demonstration takes place every Sunday.
It starts at 11:00 AM and ends at 1:30 PM.

In case of very low temperatures, it may be cancelled. Cancellation announced no later than Saturday morning on the website

To understand and compare methods of yesteryear and today, they invite their
visitors to listen to the valuable information shared by the cheesemakers and then to connect it to
contemporary artisanal production at the demonstration cheese dairy! The exhibition "Gruyère, a journey to the heart of the senses" offers an educational, fun, and interactive approach
based on the five senses.
