Experience authentic moments in the heart of La Gruyère with L’atelier du fromage. Guided by Jean-Marie Droz, a passionate master cheesemaker and Swiss cheese champion, participants embark on a journey through the local terroir, alpine traditions, and regional cheesemaking expertise.
This half-day immersion begins in an alpine pasture, around a friendly breakfast shared with a cheesemaking family. Visitors then discover the stages of alpine cheese production, from fresh milk to curd processing, through the vat, the wood fire, and the precise movements of the cheesemaker.
The experience continues with a visit to a maturing cellar in Charmey, where cheeses slowly evolve thanks to time, the care of the affineurs, and the natural conditions of the cellars. A tasting allows participants to understand the influence of maturation on the aromas, texture, and character of the cheese.
To conclude this gourmet interlude, participants share a fondue in the great outdoors, prepared with regional cheeses such as Gruyère AOP and Vacherin Fribourgeois AOP.
